PUPPIES!

Our Little Miss Daisy brought 6 brand new babies into the world on Saturday morning.  3 boys and 3 girls and they are just the cutest things.  Parker and Tiff were the standby doctors since Randy is in New York and I am in Alabama.  I just don't know what Randy and I would do without those 2 sweet kids!  We are excited about the babies and I just can't wait to see them....The pics are on my Facebook page.....

Disney World

Randy and I took Beany to Disney World in Orlando the week of April 6.  It was an absolute blast from the time we left the driveway until we returned to the driveway a week later.  We had a great hotel on property and Beany slept in his own bed every night.  We saw everything and did everything that we could and just had such a great time!  We played, watched street parties, drove race cars, got hugs from royalty such as Tigger and Pooh, saw animals, fish, plants, movies, and on and on. I could probably write a book about our trip.  I am so glad that we made that trip, I will never forget the good time we had there, and all the smiles and giggles that came from the beautiful 3 year old curly top angel.  I am still in Alabama, but will post pics when I get back home.


Quesadilla Recipe

Hi All!
I am amazed at the requests for the recipe, and so I decided to post it here.  I am not blogging often as I am working so many long hours, so I haven't had a chance to do it before now.

Easy Chicken-Mushroom Quesadillas
1 tbsp canola oil
1 large onion, chopped
8 oz. fresh, white mushrooms, coarsely chopped
3 cloves garlic, minced
2 cups cooked chicken breast, boneless, skinless, chopped
1 tsp. cumin
1 tsp. chili powder
1 tsp. oregano, dried
1/2 tsp. salt
1/4 tsp.pepper
2 cups baby spinach leaves, sliced in ribbons
4 whole wheat tortillas, 10 inch
1 cup mexican cheese, reduced fat, 4 cheese blend, shredded
cooking spray
1/2 cup salsa
1/4 cup reduced fat sour cream (I used fat free)

Heat oil in a large skillet over medium heat.  Add mushrooms and onions and cook until the mushroom water is evaporated and they begin to brown, about 5 to 7 minutes.  Add garlic and cook for 1 minute more.

Add chicken, cumin, chili powder and oregano and stir until all spices are incorporated.  Add spinach, salt and pepper and cook until spinach is wilted, about 2 minutes.

Lay one tortilla flat on your work surface and sprinkle with 1/4 cup shredded cheese.  Spoon 1/2 chicken and vegetable mixture on top of the cheese, then add an additional 1/4 cup of cheese. Top with another flour tortilla.  Heat a large nonstick skillet or griddle with cooking spray at medium heat.  Carefully place the quesadilla in pan and cook 3 minutes.  Using a large spatula, gently flip the quesadilla over and cook an additional 3 minutes.

Slice each quesadilla in quarters and serve 2 quarters on a plate with salsa and sour cream.

Ladies, this is so good and so healthy.  I got this recipe from Ellie Krieger's website and we have it at least once a week.  You can dress it up with different salsas, add pico de gallo, beans, rice what ever you like.  Let me know how you like it!  Enjoy!

Healthy Mexican Food

I found the most FABULOUS recipe for chicken and cheese quesadillas! Many of you know that I ADORE mexican food, and that was the first thing that had to go on my quest to get healthier. This recipe uses all natural ingredients and it so delicious. I can't imagine making quesadillas any other way from now on. No Time for Life

I have no time to live my life! It seems that all I do is work. But, it seems that even the darkest cloud always has a little sunshine behind it. Spending time in Alabama has given me alot of time to reflect on my life. I have learned alot about myself in the past couple of months. And, that has been really good for me. This has been one of the most difficult assignments that I have had. For many reasons, this assignment has tried my strength, my character, and my determination to always work hard and do the best job that I can. I think that all this has helped me see myself in ways that I never did before, and in many ways, has shown me that I have so much more to give than I ever believed I did before.
On a much lighter note, I got to see Anna and Beany last week. I had not seen them since Anna and her Mom came home from the hospital because of being in Alabama. She has grown a foot, it seems to me and Beany has just gotten taller and sweeter. Here is the most recent pics I took of them.

Blessings

I have been thinking this morning about all the blessings I have received in my life. They are too numerous to even try to count. God is such a wonderful God. He loves us no matter what we do, and always forgives us. He continues to bless us, no matter how much we don't deserve it, and I know that his heart must be bigger than the universe. I try and remember this at all times, but when life is causing me stress, and I am upset, I sometimes forget that he is there to help me with all the problems, no matter how big they are to me. Our problems are small to God, he loves us, helps us, blesses us and makes our lives good. I am his child, and I try to never forget that.
